Pizza makes the world go round

Do you enjoy pizza - or even have pizza night once a week at your house? We absolutely love pizza at mine. But we really hate experimenting with "new pizzas" at our local joints incase we discover, we don't like how they taste. So, we make our own at home. It's more fun, it's more cost effective, and we control the ingredients.

This is our version of Greek Pizza:

This is positively delicious if you like feta cheese, olive, spinach, and tomatos. If not, well, keep reading - there's more. :)

For the crust, we make our own from whole wheat flour. This makes it *slightly* more healthy, but it's still pizza. Come on, people, we can't eat bacon and chocolate all the time! (Well, we can...) If you don't like making your own pizza dough, most stores have fresh made uncooked pizza dough in the deli area. If you prefer, that will work just fine.

Roll out your dough to fit a 16" pie sheet. Set aside.

In microwave, soften 1 bar of cream cheese. Spread over pizza dough.

Mince garlic, and spread over top of cream cheese. Add fresh baby spinach, sliced black olives, tomato slices, crumbled feta, and shredded mozzarella cheese. Drizzle with extra virgin olive oil - and bake for 20-25 minutes on 350 or until crust is golden brown.

Again, we used a home made wheat pizza dough for the crust - but feel free to use whatever crust you prefer. I just find I like the texture of home made dough over store bought.

Roll out your dough to fit a 16" pan. Spread with your favorite BBQ sauce - or if you're REALLY motivated - make a home made batch of your own BBQ sauce. Granted, most nights, I'm not that motivated. We used a honey bbq for this.

Take 2 large boneless skinless chicken breasts and bake in oven until they are done in center. Allow to rest to reabsorb it's juices - approximately 10 minutes. Cut into cubes and layer over pizza dough & sauce.

In a sauce pan, add 1/2 stick butter and 3 tbspn EVOO. Finely slice 1 viadlia onion and sautee until caramlized. Spread over chicken. Sprinkle on mozzarella cheese.

Bake in oven for 20-25 minutes on 350 degrees or until crust is golden brown.

Simply oil your indoor or outdoor grill. Gently lay your pizza dough across the grates. Allow to grill for approximately 2-3 minutes per side.

Separately, grill your favorite veggies. I've used zuchinni, yellow squash, red onion, bella mushrooms, and tomato. Layer your veggies on your grilled pizza dough. Add your favorite cheese. Place back on grill, and cover. Remove once cheese is fully melted.

Grilled pizza has this delicious smokey flavor you just can't get from your stove. So try something new! You just might find you like it.
