Strawberry Oopsie Bread with Blueberries
Mmmm... so as I said, we were going to experiment with our Oopsie Bread recipe and try to go for a desert style oopsie bread. We had some FF Strawberry cream cheese in the fridge, so we gave it a shot.
3 eggs, separated. One bowl egg whites, One bowl egg yolks. Add a pinch of cream of tartar to the egg whites and beat until they triple in volume. Set aside. Beat egg yolks with 3 ounces strawberry cream cheese, and a pinch of baking salt. What is baking salt? Well, I have a fabulous place I found on Etsy that specializes in organics, and I am able to buy a cardamom vanilla baking salt from her and have it shipped direct to me. It's a very fine grain salt, almost a powder. If you don't have any flavored/seasoned baking salt, regular salt will work just fine.
Beat the egg yolks, strawberry cream cheese, and salt VERY well, make sure you have minimal lumps. Gently fold in the egg whites a little at a time, making sure to not deflate the egg whites.
Scoop little mounds on a olive oiled baking sheet, and bake 300 degrees for 25 minutes. Once done baking, allow to cool completely.
Once cooled, plate one strawberry oopsie bread on a plate. This is where you can BYOC, be your own chef. I used FF Whipped cream, fresh blueberries, and drizzled honey over top, topped with another oopsie bread, and repeat.
SO. DELICIOUS. OMG.
This delicious and low calorie / low carb treat is ridiculously easy to make, and ridiculously tasty. I hope you give it a shot and enjoy it as much as we did!
