Cauliflower bread grilled cheese

When I first started this way of eating, I couldn't stomach cauliflower. I may have mentioned this a time or two in other posts. I didn't like the taste, I couldn't stand the texture, and the idea of eating it not drowned in cheese, or deep fried in a batter repulsed me. But... I've learned to love it. And now, there's rarely a meal that doesn't incorporate cauliflower in some fashion.

My husband has been bugging me to make grilled cheese for the past few days. Last night one of our friends posted to us a video of grilled cheese made with cauliflower. We attempted the recipe in the video today - and it was an epic fail. So, we modified the recipe and this is what the results were.



The original recipe had us use a head of grated cauliflower, 50 grams of parmesan cheese, 3 eggs, chives, and paprika. Then you are to fry this mess in a frying pan. Epic. Fail. It doesn't hold together. It burned without even solidifying the center of the bread slices. It's just a hot mess. So... we came up with our own version.

What you will need:

1 head riced cauliflower (make sure it's finely grated)
2 Eggs
1/2 cup parmesan cheese, grated
1/4 cup shredded cheddar cheese
2 tbspn psyllium husk powder
Salt
Pepper
Chives

Mix all the ingredients until everything is fully combined. On a parchment lined baking sheet put 4 mounds of the cauliflower mixture. Flatten down to 1/4" thick, and shape into squares like bread slices. Bake 350 degrees for 20 minutes. Check to make sure they are fairly solidified. Flip the slices and bake another 5-8 minutes. Add shredded cheese to each of the slices, sliced tomato, bacon, or whatever other ingredients you like on your grilled cheese. Pop back in the oven until everything is melted. Put two slices together, and cut in half.

Voila! Cauliflower bread grilled cheese - or in this case, baked cheese sandwiches!
