Keto Rolls with Everything Seasoning

Anyone that has been on a low carb / keto journey for any length of time has been on the holy grail quest for the best tasting keto bread recipe. The worst I've ever tried was soul bread. That was just... no. I've made every variation of almond flour based, coconut flour based, flax seed based... you name it, I've made it. This is the one tried and true recipe that I go back to time after time - weekend after weekend - as it is the most true to texture and taste to the real thing. Keto bread. A bread that is soft, and fluffy, and has that true chewy bread consistency.
I've made this recipe exactly as dietdoctor.com indicates on their site - and it's good. But I need flavor. So, I've added my own flare to this fan favorite low carb bread.
What you'll need:
1 cup Almond flour (fine ground)
1/4 cup coconut flour
5 Tbsp Psyllium husk powder
3 Large egg whites
1 tsp salt
1 Tbsp garlic powder
1 Tbsp Onion powder
1 Tbsp Italian seasoning
2 tsp baking powder
2 tsp apple cider vinegar with mother
1 1/4 cup boiling water
Everything but the bagel seasoning for topping (Trader Joe's brand is best)
1 egg beaten for egg wash
Whisk together all dry ingredients. Add in the 3 egg whites and apple cider vinegar. With a hand mixer, beat the egg whites and vinegar into the dry. Slowly pour the boiling water into the dough. The dough will double to triple in volume. Keep beating until all the water is added and everything is well combined.
With wet hands - form into dough balls roughly the size of a base ball. Place onto a parchment lined baking sheet. Brush each of the rolls with the egg wash, and sprinkle with the Everything but the bagel seasoning if desired.
Bake at 350 degrees for 55-60 minutes.
Cool completely before cutting open.
