Bullet Proof Chicken Broth Soup with Broccoli and Miracle Noodle Rice
We've all heard of bullet proof coffee. But, have you heard of bullet proof chicken broth? Well. Game changer if you've stopped drinking coffee as I have recently. To keep my electrolytes up, and get my fats in - I'm making myself a bullet proof chicken broth in the morning to take with me to work for when I break my fast. Now that I'm doing OMAD *one meal a day - I have to find ways of making sure that I'm getting all the nutrients my body needs in a smaller window - without overloading my body with the digestion process of having to break down fibrous foods like meats and vegetables. Ultimately, my drink morphed into a soup - which is what we've created here.
What you're going to need:
Chicken broth (we use Lono Life brand - gluten free - no sugar added - no MSG, no maltodextrin, zero carb) - 32 ounces
Heavy Cream - 1/2 cup
Grass fed salted butter - 1/2 cup
Sour Cream - 1/2 cup
Turmeric, Black Pepper, Ginger, Paprika - 1 Tbspn each
Lo Salt, Pink salt, Garlic powder and Onion Powder - 1 Tsp each
1 lb cooked chicken breast - chopped into chunks
1 Head of broccoli florets, steamed
1 package of miracle noodle rice
1 Tbspn white chia seeds
1 tsp xanthan gum
In a blender - add the broth, heavy cream, butter, sour cream - and blend well.
In a fine mesh strainer, open package of miracle noodle rice - and rinse well. Add the rice to hot dry pan over medium-high heat. Allow the rice to dry out thoroughly over the heat. Add in all the spices listed to the rice while it is drying.
Once the spices absorb into the rice, and the rice has dried out - add in the chicken and broccoli. Let the chicken and broccoli warm through.
Add in the bullet proof chicken broth to the pan - and mix well. Allow to simmer. Add in 1 Tbsp of chia seeds, and 1 tsp xanthan gum - and whisk into the soup. Continue to simmer for 5 minutes. The soup will start to thicken some. Taste and adjust seasoning as needed. I added chili pepper flakes at the end for some heat.
