Keto Connect challenge: Keto Cook off - Cinnamon Avocado fudge brownies

One of our favorite vloggers - Keto Connect - has a challenge going on on instagram. The Keto Cook Off challenge using secret ingredients each week. This week the ingredients are: Avocado, Eggs, Cinnamon. So - of course - we're making brownies. Because we can... and because they are delicious.

A few weeks ago I posted about our chocolate walnut brownies - so we took that base recipe and altered it for this challenge. The results are amazing. Fudgy, soft, chewy. A true brownie texture that can't be beat.

Oh, and for fun? We made a cinnamon whipped cream to put on top of our brownies.



For the brownies you'll need:

3 ounces of a sugar free chocolate bar - melted over double boiler
1 ripe avocados
2 eggs
2 Tbspn unsweetened sun butter
1 tsp cinnamon
1 tsp cinnamon extract
1/4 cup Erythritol or sweetener of choice
1/2 cup unsweetened cocoa powder
1/2 tsp baking powder
1 tbspn heavy whipping cream
1/8 cup cinnamon sugar pepita's (pumpkin seeds that are coated with coconut oil spray, and tossed in a swerve/cinnamon mixture, then baked)
1/2 cup chopped walnuts


In a blender put the avocado, eggs, sun butter, cinnamon, extracts, and sugar. Blend until completely combined. Add in the melted chocolate, cocoa powder, baking powder, heavy cream. Blend until everything comes together as a batter. Stir in chopped walnuts if desired. Pour into a greased 8" x 8" baking pan. Top with cinnamon sugar pepitas, and sprinkle with a course sea salt. Bake in oven 350 for 35-40 minutes.

In a magic bullet or with a hand blender - whip 1 cup heavy cream with 1/8 tsp xantham gum, powdered swerve (to desired sweetness), and 1/4 tsp cinnamon. Top the completely cooled brownies with a bit of the cream.
