Keto Bacon Pancake Dippers & Eggs

One of my Instagram followers requested this recipe after I had posted a picture of one of our breakfasts of pancake dippers inspired by a chain diner carrying them on their menu. Clearly, we can't have theirs. But I definitely can make my own!







Bacon Pancake Dippers:

Bacon - cooked to your desired crispy level (I like super crispy) - make sure to pat dry and set aside.
2 Large Eggs
1/4 cup melted butter
1/2 cup Cashew milk (or milk of your preference - HWC will be too thick for this recipe)
1 tsp vanilla
1 tsp cinnamon
Pinch salt
A few drops liquid sweetener of choice (if desired)
2 Tbsp coconut flour
1 Tbsp psyllium husk powder
1 tsp baking powder
1/2 tsp Xanthan gum

Whisk all dry ingredients together. In a separate bowl - whisk together all wet ingredients until thoroughly combined. Add the dry to the wet. This will be slightly thicker than traditional pancake batter. If you find it's too thick, add a 1 tbsp of water at a time until it reaches your desired consistency for pancakes. I keep it more on the slightly thick side just because I like how it cooks better than when I thin it out. But, experiment - see how you prefer it.

In a hot non-stick skillet - place two of the slices of cooked bacon down. With a spoon, start ladling the batter over the length of the bacon, and spreading it outward from the bacon onto the pan. It will be oblong shape - not round. Cover, and allow to cook on medium heat for a few minutes, until bubbles start to form. After 2-3 minutes - flip the pancake gently. Allow to cook another 3-4 minutes on the other side, or until cooked through. Because of the psyllium in the recipe - it may take a little longer on the second side to completely cook through.

Once all the dippers are done. Put two pats of butter in the pan - and crack in two eggs, careful not to break the yolk. Cook on medium heat uncovered until the whites start to set up. Once the whites are no longer translucent - add 2 tbsp of water to the pan, place cover over the eggs - and cook for 2-3 minutes for soft yolk. The reason we you are adding water to the pan is to allow steam to build up in the pan, and that will help to cook the top of the egg. Season eggs once they are removed from pan on the plate.

Serve dippers with a side of sugar free maple syrup, or your dipping sauce of choice.
