Faux Apple Stuffed Pork Loin - Best Keto Dinner Ever



I came home from dinner the other night to find my husband had surprised me with this delicious faux apple pie stuffed pork loin dinner he had slaved over all afternoon. It was seriously one of the most delicious things I've ever eaten, and he was so proud of this recipe he developed. I am totally impressed by his out of the box thinking, and his fearlessness to experiment with food.

Faux Apple Filling:
2 zucchini's - peeled, and chopped into small pieces
1/4 cup butter
1/4 cup Sukrin Gold Brown Sugar Substitute
1 Tbsp lemon juice (Fresh is best)
1 tsp apple cider vinegar
1 tsp apple pie extract
1 tsp ground cinnamon
1/2 tsp xanthan gum

Melt butter in a large skillet - add zucchini. Cook until zucchini has softened. Add in the brown sugar substitute, lemon juice, ACV, Extract, and cinnamon. Mix well in pan. Turn down to simmer - and allow to simmer for 5-10 minutes - stirring occasionally. Sprinkle in the xanthan gum - and mix in to the filling. This will help to thicken. Allow to cool.

Take pork loin - and make a slit in the center - making sure not to fully cut end to end (See picture below for reference). Stuff the pocket with the cooled apple pie mixture. Reserve some of the filling for garnishing later. You may need butcher string to tie the loin together if it is over stuffed. Otherwise, carefully wrap the loin with bacon. Place the loin in a high side baking dish.

We baked ours in the airfryer oven. You can cook this in a regular oven 350 degrees until the pork has reached 145 degrees, and the bacon is cooked, and golden.

Allow the loin to rest 5-10 minutes before slicing. Once sliced - drizzle the remaining faux apple filling over each serving.
