Keto French Toast



Who doesn't love french toast? Since doing OMAD Keto - I very rarely eat breakfast these days. But, on the weekends I'm a little more relaxed and will sometimes eat two meals a day. Today, I had the deep need for french toast. And not that egg and cream cheese with cinnamon crap, either. Real french toast. So, I had to come up with something that would satisfy that craving, without breaking the carb bank. Here's what I came up with.

4 large eggs
1/4 cup heavy cream
1 tsp vanilla extract
1 tsp cinnamon
Liquid stevia drops or monk fruit drops - to taste (I added about 8 drops)
pinch salt
1/2 tsp baking powder
1/2 scoop unflavored Isopure Whey Isolate powder
2 Tbsp coconut flour
3 Tbsp almond flour - fine ground
2 tsp Pysllium husk powder
1/2 tsp xanthan gum

In a bowl - beat together eggs, heavy cream, vanilla, cinnamon, and liquid sweetener. In a separate bowl, sift together the dry ingredients. Mix wet into dry, and beat well to combine. The mixture will thicken. Take a round or square flat bottom microwave safe container, and spray with coconut oil. Pour about 1/3 of the batter in the container - and microwave on high for 1 1/2 - 2 minutes. Immediately turn out onto a wire rack to cool. Continue with the balance of the batter - cooking the next 1/3, etc. Once all the batter is cooked in the microwave, and cooled on a rack, take a sharp serrated knife, and cut into 1/4 inch thick slices of bread.

In another dish, beat together 2 eggs and 1/8 cup of heavy cream or unsweetened milk substitute of choice. Submerge each slice of bread in the egg mixture - and griddle in a hot pan with butter or coconut oil as you would regular french toast - until each side is golden brown.

I served mine with a bit of butter, and choczero syrup. It was absolutely phenomenal. I also was able to get 12 slices of "bread" form this recipe.
