Keto Chicken Mississippi "pot roast"

4 lbs boneless chicken (you can use breasts, thighs, whatever)
1/2 cup Italian dressing
1/2 cup Ranch dressing
1 stick salted butter
1/2 cup chicken stock
2 jars sliced pepperoncini peppers with juice


Literally throw everything in a slow cooker, and cook for approximately 4-5 hours on low - or until the chicken easily shreds. This is delicious served over cauliflower rice.
