Keto cheese poofs - or as I like to call them - Keetos

See what I did there? Keetos? Well, I thought it was clever. Bj and I have been making the traditional baked cheese crisps to have as snacks - but we've been craving cheese puffs, or cheese curls. Clearly, we can't have those. So we were looking at recipes last night for meringue cookies, and it hit us. Why do meringues have to be sweet? Can they also be savory? What happens if we put cheese in them?

Well, I'm sure you know us by now that we can't just let the opportunity pass!



What you will need:

4 egg whites
1/4 tsp cream of tartar
1/2 cup shredded cheddar
1/4 cup nutritional yeast
2 Tbspn fine ground almond flour

First, put the shredded cheese in freezer, and freeze for 2 hours at least. Whip the egg whites with cream of tartar to stiff peaks. Take frozen cheese shreds and crush them, and mix with the nutritional yeast, and almond flour. Fold the cheese mixture into the egg whites gently until completely combined. Put the mixture into a piping bag, and pipe little rounds onto a parchment lined baking sheet. Sprinkle with a little more of the nutritional yeast. Bake 300 degrees for 15-25 minutes. Check at 15 minutes. If still too soft, continue baking until the color is golden, and they are crisp.

Allow to cool completely.
