Low carb mini muffins with Coconut Goji by Power of 3 Nutrition

I love muffins. They are comforting, and sweet, and make a perfect breakfast or quick snack. But, of course, traditional muffins are loaded with sugar and flour. I subscribe to the Keto Krate every month - and we got two months ago the Power of 3 Nutrition Coconut Goji berry seed blend - and I immediately knew I wanted to make muffins.

And muffins I have made. They are soft. They are chewy. They taste incredible. It is the perfect treat when you need that something bready and sweet.



Ingredients:

1/2 cup Power of 3 nutrition Coconut goji blend - can locate here: https://powerof3nutrition.com/
1/4 cup maple vanilla chia flax blend by 365 Organic
1/8 cup oat fiber
1/8 cup psyllium husk powder
1 tsp baking powder
1/8 tsp salt
1/2 cup Erythritol or sweetener of choice
4 large eggs
1/4 - 1/3 cup almond milk (depends how much the mixture thickens)
1/4 cup melted butter
1 tsp vanilla extract
Mix the eggs, sugar substitute, 1/4 cup almond milk, melted butter, and vanilla in a bowl until frothy. In a separate bowl, whisk together the dry ingredients. Slowly start folding the dry ingredients into the wet. If it is too stiff (not really a pouring consistency) add the remaining almond milk. Once the dry ingredients are completely incorporated - line 24 mini muffin cups and spray with coconut oil. Laddle in the batter nearly completely full into each well. Bake at 350 degrees for 15 minutes. Check muffins. If center is too spongy - bake an additional 3-5 minutes.

Optional: You can add pumpkin seeds to the top of the muffins before putting them in the oven. They add a bit of crunch to the finished product.

What I love about these Keto Krates is that we get to try so many new and different products. I am very happy with the Coconut Goji berry blend. I have many other ideas for this - one of which may be a new hot no'oat meal recipe!
